University of Kansas - Week 7

July 21st

This internship is really starting to wind down now. There's only one more week left, so Tonya and I have been wrapping up all of the loose ends on our projects while still following our internship schedule as well.

All week we've been shadowing the supervisors of Mrs. E's. I started out following Mike, back of the house (BOH) evening supervisor. You may remember him from our recipe testing days:


Mike oversees the beginning of lunch through dinner and then to closing. We did the monthly checklist as well as the daily one to make sure everything was in tip top shape.

After closing up and leaving Mrs. E's by 9, I was back at it at 5:30 the next morning! I'm just glad I can practically roll out of my bed and be at work.
It was time to shadow Sherra, the morning BOH supervisor. Every morning she gets the ball rolling in the kitchen to start turning out breakfast and set the stage for the rest of the day.

On Wednesday Tonya and I had the pleasure of meeting Sheryl Kidwell, the assistant director of residential dining. She is the know-all go-to for sustainability information about KUDS, so we picked her brain about all the different ways dining services shows a commitment to sustainability. Currently, KUDS participates in recycling and composting while also striving to continuously improve other practices and procedures as well.

My next day at Mrs. E's was spent with Alicia, the front of the house supervisor. They had recently just shifted some people around into positions they weren't normally in, so it was a day full of lending a hand and seeing how employees were trained in different positions. I sat down with her to do the daily work assignments (DWAs) for the next day. There is a lot that is taken into consideration when doing the assignments such as the mix of employees that will be there, their experience in certain areas, how many people are scheduled as well as taking into account where the employees like to work. It's important to understand your staff in order to create a plan that will run smoothly.

Friday was another shadowing day. This time I followed around Travis, Mrs. E's culinary assistant manager. The first part of our day was spent going around to the different stations and making sure everything look and tasted good. We then printed off a bunch of the upcoming menu to analyze it for any problems and to ensure that everything meshed well and made sense with the changing times.

Our first couple of specialty items for our Opa! special Greek dinner had come in. We received spanikopita, stuffed grape leaves and some spinach fettuccine.

With the last week creeping up fast, we are getting psyched to put on our special event. Hopefully, some of the glorious supervisory and management experience we have and will continue to gain from Mrs. E's will help us run a smooth show.


Midwestern Adventures

Our last weekend in Lawrence! It was crazy to think that this may be the last time we stroll down Mass street, but I think we made the best of our last weekend and got lots of work done on our projects as well!

Saturday we visited the two museums on campus. The first we visited was the Spencer Museum of Art. The exhibit we visited first was comprised of many beautifully crafted quilts- just up my alley!


The upstairs exhibits were interesting as well:

Next we headed off to the natural history museum!

Although Tonya and I are hardcore dietetic students, even we had to check out Mass Street Soda where we heard we could find some crazy flavors of pop.
It's wicked good!
This is actually made in New Hampshire.
The first time I had it I thought it tasted a bit like poison...
But it grows on you!
So many flavors! It was hard to decide
The chosen one. Very refreshing!

We had to visit Clinton Lake one last time as well. We chose a beautiful day to do it!





I'm looking forward to having a great last week in good ol' Lawrence, Kansas. I'm sure Tonya and I will make the best of it.
